Ammonia is used as a swelling substance.

The ammonia contains two gases whose combination contributes to the swelling and this explains the wonderful airiness of the cookies, or burning in the throat if not careful in quantities or kneading. The ammoniac should be kept tightly closed, preferably in a glass jar. It has a pungent smell and not really pleasant.
